Low Carb Herb Garlic Buns!

Hey, people!! HAPPY NEW YEAR to all of you once again πŸ™‚ Hope the new year has started amazingly well for you all. It surely is going awesome in my part of the world (although it’s freezing cold). And I’m perfectly on the right track of my healthy eating.

So yesterday, I had this massive chocolate craving because it’s so freezing outside and I haven’t been keeping too well. But you know what? Determination is determination, there’s no going out of the line. I couldn’t give in to momentary temptation and had to make something delicious and low carb friendly to distract myself from chocolate.

The best thing about a low-carb high-fat lifestyle is that you can have loads and loads of fat. And fat fills you up fast! It curbs all the cravings. So I decided to make myself something delicious using the fathead dough (the holy grail of gluten-free dough). I came across an amazing recipe on alldayidreamaboutfood.com (an amazing website for low carb recipes), and decided to make them immediately with my own twist πŸ˜‰

Oh man! Trust me I’m never gonna miss the normal bread/buns again! I mean, why would I need all those carbs if fat tastes so good, right? πŸ˜‰ (And eating all the fat makes me lose weight too πŸ˜› ). Anyway, let’s get to this awesome recipe now.

Ingredients:

  • Almond flour: 1/2 cup
  • Coconut flour: 1/4 cup
  • Shredded cheese (mozzarella preferred): 1, 1/2 cup
  • Baking powder: 2 tsp
  • Salt: 1/4 tsp
  • Garlic powder: 1/2 tsp
  • Butter: 5 tbsp
  • Egg: 1

To brush on top:

  • Butter: 1 tbsp, melted
  • 1 tsp minced garlic
  • A pinch of salt
  • Dry Italian herbs: 1 tsp

Method:

  1. Preheat oven to 350F/ 175C and line a large baking tray with parchment paper or a silicone liner. In a medium bowl, combine almond flour, coconut flour, baking powder, garlic powder, and salt.

2. In a large saucepan, melt cheese over low heat until it’s melted and can be stirred together. Add butter, egg, and stir to combine. Stir in almond flour mixture until dough comes together (keep heat on low). It will still have some large streaks of cheese.

3. Turn out dough onto a parchment-lined surface and knead until uniform (this only takes a little kneading).

4. Divide dough into 16 equal portions. Shape each portion like a bun, or as you like. Place on theΒ prepared baking sheet a few inches apart (please note, do not flatten the dough much before baking, they will spread a bit while baking. I did that so my buns turned out a little flat).

5. In a small bowl, whisk together melted butter, garlic, salt, and herbs. Brush about half of the butter over the dough before baking.

6. Bake 15 to 20 minutes, until firm to the touch and golden brown. Remove and brush with remaining garlic butter. Serve warm.

Fat: 19.07g
Net Carbs: 2.7 g
Protein: 6.79g

Isn’t that a perfect treat?? It tastes absolutely delicious and exactly like bread πŸ˜€ I couldn’t believe it was so good!
